Complete Guide To Pine Nuts: 5 Ways to Use Pine Nuts

Written by MasterClass Last updated: Jun 7, 2021 • 3 min read What Are Pine Nuts? Pine nuts are the edible seeds that are found in the pine cones that grow on certain varieties of pine trees. Pine nuts are rich in monounsaturated fats and vitamin E, and have been consumed by humans since the Paleolithic period. These buttery nuts are most commonly used to make pesto sauce in Italian cooking. All pine nuts have a recognizable tear-drop shape—though some varieties, like European pine nuts, are more elongated than others—and a pale yellow-white color. Where Do Pine Nuts Come From? Pine nuts are sourced from pine trees around the world. There are about 20 varieties of pine trees with seeds large enough to harvest. The four most common are the Mexican pinyon (Pinus cembroides), the Colorado pinion (Pinus edulis), the Italian or Mediterranean stone pine (Pinus pinea), and Chinese nut pine (Pinus armandii), but there are Siberian and Korean pines, too. Afghanistan is one of the largest exporters of pine nuts in the world, behind Russia, Mongolia, China, and Korea. In the United States, there are even laws pertaining to the harvest of pine nuts. In Nevada, treaties guarantee certain Native American tribes an exclusive right to harvest. In New Mexico, the word “piñon” is used exclusively for species of indigenous pines. How Are Pine Nuts Harvested? Pine trees take about 25 years to even begin producing edible seeds—even longer to maintain consistent production—and a good majority of pine nuts are harvested by hand. The harvesting process for pine nuts is incredibly labor-intensive, which is reflected in their high price-point. Pine nuts are found in the pine cone: There are about two pine kernels beneath each pine cone scale. To make it easier to pry the seeds from the more tightly packed cones, they are placed in a burlap bag and left to dry out in the sun for just under a month, in order to coax the scales open. The seeds are then removed by hand from each cone. The final step in the harvesting process is shelling: Like pistachios, each pine nut is encased inside an outer shell that must be removed. What Do Pine Nuts Taste Like? Pine nuts have a soft, nutty flavor with an undercurrent of sweetness, similar to cashews. A bitter taste can also be a sign that the natural oils in pine nuts have turned rancid, which happens if they’re left in the pantry too long after opening. Store pine nuts in the freezer to prevent to extend their shelf life. 5 Ways to Use Pine Nuts The buttery, sweet flavor of pine nuts lends itself to a number of preparations: 1. Pesto sauce: Pine nuts are most often associated with their role in enriching pesto. When combined with fresh, peppery basil, grassy olive oil, and garlic, pine nuts add a subtle nuttiness and thick, creamy texture. 2. Salads: Pine nuts are inherently oily, so toasting them is a quick and easy way to intensify their flavor for a more distinctive bite. Add pine nuts to salads for a gentler crunch than almonds. 3. Dips: Toasted pine nuts make a great garnish on any spread of appetizing dips or mezzes, but they can also be incorporated into hummus or white bean dip for a little added texture. 4. Desserts: The soft consistency and warm, nutty flavor of pine nuts makes a great addition to delicate, buttery tart crusts—especially when contrasted with a bright filling, like Chef Thomas Keller’s lemon sabayon tart with a pine nut pastry crust. 5. Coffee: In the southwestern United States, pine nuts or pine nut oil is used to make piñón, or pine nut-infused coffee.

According to the Ministry of Industry and Commerce (MoIC), Afghanistan has exported at least 2,000 tons of pine nuts worth $23 million in the past five months.

According to the officials of this ministry, Afghanistan pine nuts are mostly exported to China, Pakistan, India, Italy, United Arab Emirates, and the USA. Akhundzada Abdul Salam Jawad, a spokesman for the ministry, said that 1,000 tons of pine nuts have been exported via air corridors. “We have exported 2,100 tons of pine nuts through the air and land corridors, the monetary value of which is about 23 million dollars, which goes to China, Pakistan, India, Italy, the United Arab Emirates, and the United States,” said Akhundzada Abdul Salam Jawad. Meanwhile, some traders said that the lack of a regular air corridor program and the lack of cold storage fot pine nuts are the biggest challenges. “We urge the Islamic Emirate to provide a means to transfer pine nuts to European countries by land,” said Zalmai Azimi, a trader. “Lack of a regular export program and finally the lack of regular cold storage are still the main problems,” said Mahboob Ullah Mohammadi, a trader. Some economists believe that increasing the exports of pine nuts plays an important role in increasing the country's income. “Previously, this process was done in other countries, but fortunately, now we have processing factories inside the country,” said Azrakhsh Hafizi, an economist. Based on the numbers of the pine nuts union, Afghanistan's pine nut yield will reach more than 10,000 tons this year, most of which are obtained from Khost and Paktia.

Afghanistan's Pinenuts Season 2023: A Promising Harvest with New Challenges

Introduction As the pinenut season approaches in Afghanistan, farmers and traders are filled with anticipation for what lies ahead. This year, the pinenut jungles hold the promise of higher quality and larger pinenuts compared to the last two years. However, amidst the optimism, there are challenges that the industry must navigate. In this blog, we will explore the expected harvest, the impact of weather on pinenuts, the significance of traditional practices, and the struggles faced by farmers and traders. Abundant Harvest with Improved Quality The pinenuts from Afghanistan are renowned for their distinct taste and nutritional value. This year's harvest is expected to be no exception, with the jungles of Paktia, Paktika, and Khost provinces producing the highest quality pinenuts. Measuring between 1.5cm to 2.0cm, these pinenuts boast a higher oil content than those grown in Laghman, Nangarhar, and other regions. Projected Quantity and Export Trends Based on average studies conducted by RG Factory, it is estimated that the quantity of pinenuts available this year may range from 5000MT to 9000MT. While these numbers indicate a decline compared to the harvests of 2022 and 2021, it's essential to consider that a significant portion of pinenuts is indirectly exported through unofficial channels not reflected in official statistics. Weather's Influence on Harvest Rains play a pivotal role in determining the size and quality of pinenuts. Regular weather patterns directly affect both the quality and weight of the harvest. Therefore, rainfall in the pinenut regions becomes crucial to the success of the season. Challenges and Hazards of Harvesting Unfortunately, every year, the pinenut harvest also brings challenges and hazards for farmers. While collecting pinenuts from the trees, more than 10% of pinenut trees are destroyed, leading to damage to the jungles and a decline in pinenut quality. Tragically, farmers also face injuries, with 20 to 80 people falling from trees during harvesting. Traditional Methods Impacting Quality One of the most critical aspects affecting pinenut quality and weight is the traditional methods employed in processing and storage. Between the provinces of Paktia, Paktika, and Khost, significant losses, amounting to $5 million USD to $10 million USD, occur due to bad seeds and weight discrepancies among farmers. Modern Facilities and Limited Adoption To address quality and weight issues, modern facilities have been established in Gardez City, Paktia. These facilities provide standard processing and cold storage of pinenuts, minimizing losses for traders at a cost of only 5 Afg per kg per month. However, the adoption of these facilities remains limited, as only a few farmers have integrated them into their practices. Conclusion As the countdown to the pinenut harvesting season begins, Afghanistan's farmers and traders are hopeful for a successful year. The projected abundance and improved quality of pinenuts present exciting prospects for the industry. However, challenges such as weather dependence, traditional practices, and losses due to improper handling demand attention. Embracing modern techniques and facilities could pave the way for a more sustainable and profitable future for Afghanistan's pinenut trade. While the pinenut season is a time of excitement and opportunity, it also comes with its share of difficulties. Ensuring fair trade practices, promoting modern processing methods, and enhancing safety measures during harvesting can help secure a more prosperous and sustainable future for this valuable industry.
