Complete Guide To Pine Nuts: 5 Ways to Use Pine Nuts

Written by MasterClass Last updated: Jun 7, 2021 • 3 min read What Are Pine Nuts? Pine nuts are the edible seeds that are found in the pine cones that grow on certain varieties of pine trees. Pine nuts are rich in monounsaturated fats and vitamin E, and have been consumed by humans since the Paleolithic period. These buttery nuts are most commonly used to make pesto sauce in Italian cooking. All pine nuts have a recognizable tear-drop shape—though some varieties, like European pine nuts, are more elongated than others—and a pale yellow-white color. Where Do Pine Nuts Come From? Pine nuts are sourced from pine trees around the world. There are about 20 varieties of pine trees with seeds large enough to harvest. The four most common are the Mexican pinyon (Pinus cembroides), the Colorado pinion (Pinus edulis), the Italian or Mediterranean stone pine (Pinus pinea), and Chinese nut pine (Pinus armandii), but there are Siberian and Korean pines, too. Afghanistan is one of the largest exporters of pine nuts in the world, behind Russia, Mongolia, China, and Korea. In the United States, there are even laws pertaining to the harvest of pine nuts. In Nevada, treaties guarantee certain Native American tribes an exclusive right to harvest. In New Mexico, the word “piñon” is used exclusively for species of indigenous pines. How Are Pine Nuts Harvested? Pine trees take about 25 years to even begin producing edible seeds—even longer to maintain consistent production—and a good majority of pine nuts are harvested by hand. The harvesting process for pine nuts is incredibly labor-intensive, which is reflected in their high price-point. Pine nuts are found in the pine cone: There are about two pine kernels beneath each pine cone scale. To make it easier to pry the seeds from the more tightly packed cones, they are placed in a burlap bag and left to dry out in the sun for just under a month, in order to coax the scales open. The seeds are then removed by hand from each cone. The final step in the harvesting process is shelling: Like pistachios, each pine nut is encased inside an outer shell that must be removed. What Do Pine Nuts Taste Like? Pine nuts have a soft, nutty flavor with an undercurrent of sweetness, similar to cashews. A bitter taste can also be a sign that the natural oils in pine nuts have turned rancid, which happens if they’re left in the pantry too long after opening. Store pine nuts in the freezer to prevent to extend their shelf life. 5 Ways to Use Pine Nuts The buttery, sweet flavor of pine nuts lends itself to a number of preparations: 1. Pesto sauce: Pine nuts are most often associated with their role in enriching pesto. When combined with fresh, peppery basil, grassy olive oil, and garlic, pine nuts add a subtle nuttiness and thick, creamy texture. 2. Salads: Pine nuts are inherently oily, so toasting them is a quick and easy way to intensify their flavor for a more distinctive bite. Add pine nuts to salads for a gentler crunch than almonds. 3. Dips: Toasted pine nuts make a great garnish on any spread of appetizing dips or mezzes, but they can also be incorporated into hummus or white bean dip for a little added texture. 4. Desserts: The soft consistency and warm, nutty flavor of pine nuts makes a great addition to delicate, buttery tart crusts—especially when contrasted with a bright filling, like Chef Thomas Keller’s lemon sabayon tart with a pine nut pastry crust. 5. Coffee: In the southwestern United States, pine nuts or pine nut oil is used to make piñón, or pine nut-infused coffee.

According to the Ministry of Industry and Commerce (MoIC), Afghanistan has exported at least 2,000 tons of pine nuts worth $23 million in the past five months.

According to the officials of this ministry, Afghanistan pine nuts are mostly exported to China, Pakistan, India, Italy, United Arab Emirates, and the USA. Akhundzada Abdul Salam Jawad, a spokesman for the ministry, said that 1,000 tons of pine nuts have been exported via air corridors. “We have exported 2,100 tons of pine nuts through the air and land corridors, the monetary value of which is about 23 million dollars, which goes to China, Pakistan, India, Italy, the United Arab Emirates, and the United States,” said Akhundzada Abdul Salam Jawad. Meanwhile, some traders said that the lack of a regular air corridor program and the lack of cold storage fot pine nuts are the biggest challenges. “We urge the Islamic Emirate to provide a means to transfer pine nuts to European countries by land,” said Zalmai Azimi, a trader. “Lack of a regular export program and finally the lack of regular cold storage are still the main problems,” said Mahboob Ullah Mohammadi, a trader. Some economists believe that increasing the exports of pine nuts plays an important role in increasing the country's income. “Previously, this process was done in other countries, but fortunately, now we have processing factories inside the country,” said Azrakhsh Hafizi, an economist. Based on the numbers of the pine nuts union, Afghanistan's pine nut yield will reach more than 10,000 tons this year, most of which are obtained from Khost and Paktia.

A Journey Through Time and Triumph

Stories of Afghan Pinenuts: A Journey Through Time and Triumph By Mahboobullah Gardezi The Forest's Gift: A Season of Hope In the heart of Afghanistan, the new pinenuts season brings more than just a harvest; it brings hope. This year, between 4,000MT to 6,000MT of pinenuts are expected to be harvested, with a market value nearing $100,000,000. But the true story lies in the delicate dance between quality and quantity that makes Afghan pinenuts so unique. Especially in the forests of Paktia, where the largest and finest pinenuts are found, the relationship between quality and quantity is a fascinating one: when the quality of pinenuts is high, the quantity is lower, and when the quality is lower, the quantity is higher. As the season progresses, the harvest starts strong but gradually dwindles, leaving farmers and their families waiting eagerly for the next opportunity. For many, this season is a chance to turn their fortunes around. The Lost Decades: From War to Renewal For 40 long years, the story of Afghan pinenuts was one of loss. During the civil war, these precious nuts were sold through Pakistan, often rebranded as Pakistani products. Farmers, desperate to survive, cut down trees to heat their homes, and vast stretches of pinenut forests were destroyed. But change was on the horizon. In recent years, with the involvement of the Afghan government, cutting down trees became a crime, and the forests slowly began to recover. Since 2021, new pinenut trees have been planted across Afghanistan, particularly in Loya Paktia, which includes the provinces of Paktia, Paktika, Khost, Logar, and Wardak. Farmers in these regions have come to see pinenuts not just as a crop, but as a lifeline. The Season of Farmers: A Historic Turnaround The year 2023 will forever be remembered as the "Season of Farmers." Named by the Rahim Gardezi Pinenuts Processing Factory, this season saw a revolution in pricing strategies that put farmers first. Raw pinenuts were exported at prices ranging from $15 to $31 per kilogram, marking a historic moment in Afghan agriculture. This was more than just a profitable season—it was a season of redemption. For years, farmers had faced the cruel games of brokers, seeing their investments vanish and their debts pile up. Families suffered, and tragedies unfolded. But in 2023, for the first time, farmers cleared their debts and earned a profit. The factory played a crucial role in this success, purchasing high-quality pinenuts directly from farmers’ homes and ensuring that their hard work was rewarded. Empowering the Future: Jobs and Education The Rahim Gardezi Pinenuts Processing Factory is not just about nuts; it's about people. During times of political crisis, the factory created over 200 jobs, including opportunities for more than 60 women. Today, over 250 families are supported by the factory, with a special focus on empowering women who are the primary earners in their households. But the factory’s vision goes beyond providing jobs. We've established guidelines to encourage these women to send their children to school, believing that education is the key to a brighter future. The factory is committed to growing Afghanistan’s economy from within—starting with the empowerment of women and their children. More Stories to Come The story of Afghan pinenuts is far from over. With each season comes new challenges, new successes, and new stories of resilience and triumph. As we move forward, I look forward to sharing more of these incredible journeys with you.
